Job Summary:
The Meat Cutter (Journeyman) is responsible for the precise and efficient cutting and preparation of meat products. This role ensures that all meat products meet the highest standards of quality and presentation, maintaining a clean and safe work environment, and providing excellent customer service.
Key Responsibilities:

• Meat Cutting and Preparation:
  • Cut, trim, and prepare a variety of meat products including beef, pork, poultry, and seafood.
  • Perform tasks such as boning, trimming, grinding, and slicing meats to specified cuts and weights.
  • Prepare specialty items such as sausages, cured meats, and marinated cuts.
• Quality Control:
  • Inspect meat products for quality, ensuring they meet company standards for freshness, appearance, and safety.
  • Manage inventory to ensure meat products are rotated properly to maintain freshness.
• Customer Service:
  • Provide knowledgeable and courteous service to customers, answering questions and fulfilling special requests.
  • Advise customers on various cuts of meat, cooking methods, and recipes.
• Safety and Sanitation:
  • Adhere to all health and safety regulations, including proper handling and storage of meat products.
  • Maintain a clean and organized work area, including equipment, tools, and surfaces.
  • Follow all company policies and procedures regarding sanitation and food safety.
• Team Collaboration:
  • Work effectively as part of a team, communicating clearly with coworkers and management.
  • Assist with training and mentoring apprentices or less experienced meat cutters.

 

• Record Keeping:
  • Keep accurate records of meat inventory, waste, and sales.
  • Ensure proper labeling and pricing of products.

Qualifications:

• Experience:
  • Typically requires completion of a meat cutting apprenticeship or equivalent experience.
  • Extensive experience in meat cutting, including knowledge of various cuts and preparation methods.
• Skills:
  • Proficient in using meat cutting tools and equipment, such as knives, saws, grinders, and slicers.
  • Strong attention to detail and ability to perform precise cuts.
  • Good physical stamina and dexterity, capable of lifting heavy pieces of meat and standing for long periods.
  • Excellent customer service skills.
• Knowledge:
  • Thorough understanding of meat quality, grades, and standards.
  • Knowledge of food safety and sanitation regulations.
• Education:
  • High school diploma or equivalent preferred.
  • Certification or training in meat cutting or butchery is advantageous.

Working Conditions:

• Work is typically performed in a refrigerated environment.
• Requires lifting, bending, and standing for extended periods.
• May involve working early mornings, evenings, weekends, and holidays.
